Afternoon Tea Cupcakes



Mocha Cupcakes

Ingredients 
Windsor Vanilla Cupcake mix
Beau Cappuccino Flavouring
Windsor Cupcake Cases 
Windsor Chocolate Frosting
Palette knife
Scrumptious Sprinkles Mini Mallows
Cocoa Powder
Kitchencraft Mini Sieves


Make up cupcakes as per the instructions on the Windsor Vanilla Cake box and add the Cappuccino flavouring to taste. When baked, leave to cool completely.
Empty the Windsor Chocolate Frosting into a bowl and mix on slow speed or by hand to loosen the frosting. Using palette knife, spread the frosting on top of the cupcake giving ruff, rustic effect.
Decorate the top by adding some Scrumptious Sprinkles Mini Mallows. Using one of the Kitchencraft Mini Sieves, gently dust over some cocoa powder from a height. 


Eton Mess Cupcakes

Make up cupcakes as per the instructions on the Windsor Vanilla Cake box. When baked, leave to cool completely.
Empty the Windsor Strawberries & Cream Frosting into a bowl and mix on slow speed or by hand to loosen the frosting. Cut the end off a Windsor Piping Bag and insert the 2D Nozzle. Fill the piping bag with frosting. Twist the top of the piping bag tight, gently squeeze and make a swirl of frosting on top of the cupcake. (Take a look at the video below to perfect your swirls).
To make the two tone swirl, place some of the vanilla frosting down one side of the piping bag and place some of the strawberries & cream frosting down the other. Alternatively, you could use a colour paste to colour the frosting.
Decorate the top by sprinkling with Scrumptious Sprinkles Strawberry Crunch and Meringue Drops. 


Lemon Meringue Cupcakes

Make up cupcakes as per the instructions on the Windsor Lemon Cake box. When baked, leave to cool completely.
Empty the Windsor Frosting (Your Choice) into a bowl and mix on slow speed or by hand to loosen the frosting. Cut the end off a Windsor Piping Bag and insert the 2R Nozzle. Fill the piping bag with frosting.  Twist the top of the piping bag tight, gently squeeze and make a swirl of frosting on top of the cupcake. (Take a look at the video below to perfect your swirls).
Put some lemon curd into a microwave safe bowl or cup and heat gently on low power for a few minuets until runny in consistency. Using a teaspoon, drizzle the lemon curd over the top of the frosting swirls, creating a drizzle effect. 
Decorate by adding Scrumptious Sprinkles Meringue Drops.
