The rich, freshly brewed flavor of our Pure Coffee Extract is achieved through our careful distillation of premium coffee beans. The full-bodied flavor enhances frozen desserts, baked goods and cocoa as well as savory dishes, like soups, gravies, tomato sauces and salsas. Plus, this concentrated extract is easy to keep on hand, unlike ground coffee or beans, which rapidly lose their flavor.

This popular flavor has been captured in Nielsen-Massey's Coffee Extract, made from the finest Arabica coffee, according to the strictest quality standards. Neilsen-Masssey Coffee Extract is a wonderful accent to vanilla, chocolate, nut and spice flavors, and is delicious in cake, cookie and confectionary applications. Coffee Extract can also be used as an accent in soup and sauce recipes, iced and hot beveraes, creme brulee, and puddings.

Coffee Cloud Meringues

200 g sugar
4 egg whites
2 teaspoons Nielsen-Massey Pure Coffee Extract
1/8 teaspoon cream of tartar

Process the sugar in a miniature food processor until very fine. Preheat the oven to 105 degrees C. Line a baking sheet with parchment paper. 

Whip the egg whites in a non plastic bowl using an electric mixer on medium-high speed. Whip in the coffee extract and cream of tartar. Add the sugar 1 tablespoon at a time, beating after each addition. Beat until the mixture is glossy and will hold a stiff peak. 

Pipe the meringues using a pastry bag with a star tip or making dollops with a tablespoon onto the prepared baking sheet. Bake for 1 hour or until the meringues are dry. Turn off the oven and allow the meringues to cool in the oven, away from drafts, for several hours or overnight. Store in an airtight container.
